  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1 lb peeled baby potatoes
  • 3 tbsp extra virgin olive oil

  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry the chicken breasts.
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper; add chicken and marinate for at least 30 minutes.
  3. Set Instant Pot to ‘Sauté’ mode; heat olive oil and sear chicken for about 3 minutes on each side until golden brown.
  4. Remove chicken; add baby potatoes to the pot and pour remaining marinade over them.
  5. Return chicken on top of potatoes; seal lid and set to high pressure for 8 minutes.
  6. After cooking, allow for a natural release for 5 minutes before quick-releasing any remaining steam. Serve with fresh herbs if desired.
