  • 8 oz fresh mozzarella cheese (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh basil leaves
  • 2 tbsp balsamic glaze
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season both sides of the chicken breasts generously with salt and pepper.
  3. In a large oven-safe skillet over medium-high heat, add olive oil. Sear the chicken breasts for 4-5 minutes on each side until golden brown.
  4. Add halved cherry tomatoes around the chicken and top each breast with sliced mozzarella. Transfer skillet to the preheated oven and bake for about 10 minutes until cheese is melted.
