  • 1/4 cup fresh dill, chopped
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup instant couscous
  • 2 tbsp extra virgin olive oil

  • 1 tsp garlic powder

Instructions

  1. Chop the fresh dill and zest the lemon.
  2. In a bowl, combine olive oil, salt, pepper, lemon juice, and half the dill. Coat the chicken breasts in the mixture and marinate for 5 minutes.
  3. Heat a skillet over medium heat. Cook the marinated chicken for about 6 minutes on each side until golden brown.
  4. While cooking the chicken, bring water to a boil in another pot according to couscous package instructions. Stir in couscous, cover, and remove from heat. Let sit for 5 minutes until fluffy.
  5. Fluff couscous with a fork; stir in remaining dill and lemon juice. Slice cooked chicken into strips.
  6. Serve couscous in bowls topped with sliced chicken and garnish with extra dill or lemon wedges.
