Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a saucepan. Bring to a boil, then cover and simmer for about 20 minutes until water is absorbed.
  2. Let cooked rice sit covered for an additional 5 minutes. Stir in rice vinegar and salt; spread on a baking sheet to cool.
  3. Mix diced tuna with Sriracha and mayonnaise (if using) in a bowl.
  4. Heat vegetable oil in a skillet over medium-high heat. Form cooled rice into squares and fry until golden brown on each side (about 3 minutes).
  5. Assemble by placing two crispy rice squares on plates, topping with spicy tuna, avocado slices, scallions, and sesame seeds.
