  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup full-fat coconut milk
  • 4 tbsp unsalted butter
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp coriander
  • ½ tsp chili powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Chop onions and mince garlic and ginger.
  2. In a skillet over medium heat, melt 2 tbsp butter. Sauté onions until golden brown, then add garlic and ginger until fragrant.
  3. Transfer the sautéed mixture to a slow cooker. Add chicken thighs, crushed tomatoes, coconut milk, and remaining spices.
  4. Cover and cook on low for 6 hours or high for 4 hours.
  5. Once cooked, shred chicken with two forks and return it to the slow cooker along with the remaining butter.
  6. Stir well and serve over rice or naan with fresh cilantro on top.
