  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup canned pumpkin puree
  • 4 cups low-sodium chicken broth
  • 1 (14.5 oz) can diced tomatoes with herbs
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • ½ tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Chop onion, carrots, celery, and mince garlic.
  2. Place chicken thighs at the bottom of the crockpot. Layer with pumpkin puree, diced tomatoes (with juices), chopped veggies, and minced garlic.
  3. Season with thyme, sage, cinnamon, salt, and pepper. Pour in enough chicken broth to just submerge the ingredients.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Once cooked, shred the chicken directly in the pot and stir until well combined.
  6. Serve warm in bowls; garnish with fresh herbs if desired.
