  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup orzo pasta
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Juice of 1 fresh lemon
  • 2 cups fresh spinach
  • 2 tsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to the sauté setting. Add olive oil and garlic; sauté until fragrant (about 1 minute).
  2. Add chicken breasts, seasoning generously with salt and pepper. Sauté for about 5 minutes until browned.
  3. Pour in chicken broth, add lemon juice and oregano; stir well.
  4. Seal the lid and set the Instant Pot to manual high pressure for 8 minutes. Allow natural release for 10 minutes before quick releasing any remaining steam.
  5. Remove chicken, stir in orzo and spinach, then close the lid for an additional 5 minutes on sauté mode.
  6. Shred the chicken using two forks, return it to the pot, and stir well before serving.
