  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed

  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 4 cups low-sodium vegetable broth

Instructions

  1. Set the Instant Pot to sauté mode. Add a splash of olive oil and sauté diced onions and bell peppers for about 5 minutes until softened.
  2. Add ground turkey along with salt, pepper, chili powder, and cumin. Cook until browned (6-8 minutes), breaking it up as it cooks.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Mix in quinoa, canned tomatoes (with juices), drained black beans, and vegetable broth. Stir well to combine.
  5. Close the Instant Pot lid securely and set to manual high pressure for 8 minutes. Once done, let it naturally release for 5 minutes before performing a quick release.
  6. Stir the chili before serving into bowls; top with avocado or cilantro if desired.
