  • 1 lb boneless, skinless chicken thighs
  • 1 cup wild rice blend
  • 1 cup canned pumpkin puree
  • 6 fresh sage leaves (or 1 tsp dried sage)
  • 4 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the onion, garlic, carrots, and fresh sage leaves.
  2. Set your Instant Pot to sauté mode. Add olive oil, followed by onions and garlic. Cook until soft and fragrant (about 3 minutes).
  3. Stir in chopped carrots with salt and pepper.
  4. Add chicken thighs and brown for about 5 minutes before mixing in pumpkin puree and chicken broth.
  5. Stir in wild rice and fresh sage leaves. Seal the lid and set to high pressure for 15 minutes.
  6. Allow natural pressure release for 10 minutes, then quick-release any remaining steam. Serve hot with an additional sprinkle of sage.
