  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Set your Instant Pot to sauté mode. Add olive oil, onion, and bell pepper; cook until softened (about 5 minutes).
  2. Stir in the ground turkey and garlic; brown thoroughly.
  3. Add chili powder and cumin; mix well for about a minute.
  4. Pour in diced tomatoes (with juice) and add the drained beans; stir to combine.
  5. Close the lid securely and set the Instant Pot to high pressure for 10 minutes.
  6. Once done, carefully release steam, open the lid, stir, and serve hot with desired toppings.
