  • 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • Salt & pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Set your Instant Pot to 'Sauté' mode. Add olive oil and sauté onions, carrots, and celery for about 5 minutes until softened. Add minced garlic during the last minute.
  2. Stir in oregano, thyme, salt, and pepper.
  3. Add white beans and vegetable broth; mix well.
  4. Close the lid and seal the pot. Set to 'Manual' high pressure for 20 minutes.
  5. Once done, perform a quick release of pressure. Open carefully and stir before serving.
  6. Garnish with fresh parsley or an extra drizzle of olive oil as desired.
