  • 1 cup canned pumpkin puree (100% pure)
  • 4 cups vegetable broth
  • 6 fresh sage leaves

  • 4 oz crispy prosciutto (about 4 slices)

Instructions

  1. Prepare all ingredients and set the Instant Pot to sauté mode.
  2. Sauté sliced prosciutto until crispy (5-7 minutes). Remove and set aside on paper towels.
  3. In the same pot, add chopped onions and minced garlic; cook until soft (3-4 minutes).
  4. Stir in Arborio rice and toast for 2 minutes.
  5. Add pumpkin puree and vegetable broth along with sage leaves; stir well and lock the lid.
  6. Pressure cook on high for 8 minutes; manually release pressure when done.
  7. Stir in Parmesan cheese until melted. Serve hot topped with crispy prosciutto.
