  • 1 whole chicken (45 lbs)
  • 8 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp lemon juice
  • 1 cup chicken broth or water

Instructions

  1. Rinse the whole chicken under cold water and pat it dry with paper towels.
  2. In a bowl, mix minced garlic, olive oil, herbs, salt, pepper, and lemon juice. Rub the mixture all over the chicken, including inside the cavity.
  3. Set the Instant Pot to 'Sauté' mode. Add olive oil and sear the chicken breast-side down for about 5 minutes until golden brown. Flip and repeat on the back side.
  4. Pour in chicken broth or water. Secure the lid and set to high pressure for 25-30 minutes.
  5. After cooking, let it naturally release pressure for 10 minutes before quickly releasing any remaining steam.
  6. For crispy skin, transfer the chicken to a baking sheet and broil in the oven at high heat for an additional 5-7 minutes until browned.
