  • 1 lb ground beef or turkey
  • ½ cup breadcrumbs
  • ¼ cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1 medium zucchini, sliced into half-moons
  • 1 medium red onion, cut into wedges
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef or turkey, breadcrumbs, garlic, parsley, salt, and pepper until well mixed.
  3. Form the mixture into golf ball-sized meatballs and place them on one side of the baking sheet.
  4. On the other side, arrange cherry tomatoes, zucchini, and red onion. Drizzle with olive oil and lemon juice.
  5. Roast in the oven for 20-25 minutes until meatballs reach an internal temperature of 165°F (74°C) and veggies are tender.
  6. Serve warm from the pan or plate as desired.
