  • 2 ripe mangoes, diced
  • 1/2 red onion, diced

  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a large baking sheet by spraying it with nonstick cooking spray or lining it with parchment paper.
  3. In a bowl, mix olive oil, garlic powder, cumin, salt, and pepper; rub this mixture over the chicken breasts.
  4. In another bowl, combine diced mangoes, red onion, cilantro, and lime juice; mix well to create the salsa.
  5. Place seasoned chicken on one side of the prepared baking sheet; spoon half of the mango salsa over the chicken and spread the remaining salsa on the other side.
  6. Roast in the oven for about 25-30 minutes until the chicken reaches an internal temperature of at least 165°F (74°C). Serve warm with extra salsa on top.
