  • 4 salmon fillets (about 6 oz each)
  • 1 lb baby potatoes, halved
  • 1 bunch asparagus (about 1 lb), trimmed
  • 3 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried dill or thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or lightly coat with nonstick spray.
  3. In a bowl, toss the baby potatoes with 2 tablespoons of olive oil, salt, pepper, and half of the dried herbs. Spread them on one side of the baking sheet.
  4. Place the salmon fillets on the other side of the sheet. Drizzle with remaining olive oil, lemon juice, and season with salt, pepper, and remaining herbs.
  5. Toss the asparagus in a little olive oil before placing it next to the salmon.
  6. Roast for 15-20 minutes until salmon flakes easily and potatoes are tender.
