  • 34 boneless, skinless chicken breasts (1.52 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced

  • 2 tsp chili powder
  • 1 tsp cumin
  • Juice of 1 lime
  • 1 cup low-sodium chicken broth

Instructions

  1. Slice the bell peppers and onion into strips and mince the garlic.
  2. In a large bowl, mix chili powder, cumin, salt, and pepper. Toss the chicken breasts in the spice mixture until well coated.
  3. Place seasoned chicken at the bottom of the slow cooker and layer with bell peppers and onions.

  5. Cover and cook on low for 6 hours or high for 3 hours until chicken is tender.
