  • 4 medium bell peppers (any color)
  • 1 lb lean ground chicken
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, no-salt-added
  • 1 cup cooked brown rice or quinoa
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove the seeds. Place them upright in the prepared baking dish.
  3. In a skillet over medium heat, sauté the onions until translucent (about 5 minutes). Add minced garlic and ground chicken; cook until browned.
  4. Mix in diced tomatoes, cooked rice or quinoa, Italian seasoning, salt, and pepper. Let simmer for about 5 minutes.
  5. Generously spoon the filling into each pepper and top with cheese if desired.
  6. Cover the baking dish with foil and bake for 25 minutes. Remove foil and bake an additional 5 minutes until cheese is bubbly.
