  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium red onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp fajita seasoning
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Season the chicken breasts with salt, pepper, and half of the fajita seasoning.
  3. Toss the sliced bell peppers and onion in a bowl with olive oil and the remaining fajita seasoning.
  4. Arrange the seasoned chicken on one side of the baking sheet and the veggies on the other.
  5. Roast in the oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
