Sheet Pan Garlic Butter Cod with Zucchini and Squash

  • 4 cod fillets (6 oz each)
  • 2 medium zucchinis, sliced into half-moons
  • 2 medium yellow squashes, sliced into half-moons
  • 4 cloves garlic, minced
  • 4 tbsp unsalted butter
  • Juice of 1 lemon
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • 1 tsp paprika

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange zucchini and yellow squash on one side of the baking sheet.
  3. In a saucepan over low heat, melt the butter; stir in minced garlic until fragrant. Remove from heat and mix in lemon juice, salt, pepper, oregano, and paprika.
  4. Drizzle half of the garlic butter mixture over the veggies; toss to coat evenly.
  5. Place cod fillets on the other side of the baking sheet; pour remaining garlic butter over them and season with salt and pepper.
  6. Roast for 15-20 minutes until cod flakes easily with a fork and vegetables are tender.
