  • 1 cup long-grain white rice
  • 1.5 cups chicken broth
  • ½ cup sour cream or Greek yogurt
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Prepare your ingredients by dicing the onion and bell pepper, mincing the garlic, and cutting the chicken into bite-sized pieces.
  2. Set the Instant Pot to sauté mode. Heat oil and sauté the onion until translucent (about 3 minutes). Add garlic and bell peppers; sauté for an additional 2 minutes until fragrant.
  3. Add the chicken and chipotle peppers along with salt and pepper. Cook for about 5 minutes until slightly browned.
  4. Pour in rinsed rice and chicken broth; stir gently to combine.
  5. Seal the lid and cook on high pressure for 10 minutes. Allow natural release for 5 minutes before quick-releasing any remaining pressure.
  6. Fluff the mixture with a fork and serve topped with sour cream, cilantro, and lime wedges.
