  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 2 bell peppers (mixed colors), chopped
  • 1 medium red onion, chopped
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1 avocado, sliced
  • 2 cups cooked rice or quinoa

Instructions

  1. Preheat oven to 400°F (200°C). Chop bell peppers and red onion.
  2. In a bowl, drizzle olive oil over chicken breasts and season with cumin, chili powder, garlic powder, salt, and pepper.
  3. Heat olive oil in a skillet and sauté chopped veggies for about 5 minutes until soft.
  4. Cook seasoned chicken in another skillet for about 6-7 minutes per side until browned (internal temp of 165°F).
