  • 4 large bell peppers (red, yellow, or green)
  • 1 pound lean ground beef or turkey
  • 1 cup long-grain white rice
  • 1 can (15 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the bell peppers by washing them, slicing off the tops, and removing seeds. Set aside.
  2. Press the sauté button on your Instant Pot and heat olive oil. Add chopped onion and minced garlic; cook until fragrant (about 3 minutes).
  3. Add ground meat to the pot; season with salt and pepper. Brown the meat for about 5 minutes.
  4. Stir in diced tomatoes (with juice), rice, and any additional seasonings you prefer.
  5. Stuff each pepper with the mixture until overflowing. Place upright in the Instant Pot on the trivet.
  6. Close the lid securely and cook on high pressure for 8 minutes. Allow natural pressure release for 5 minutes before quick releasing.
