  • 12 oz smoked sausage (sliced)
  • 1 lb baby potatoes (halved)
  • 2 ears corn on the cob (cut into halves)
  • 2 tbsp Old Bay seasoning
  • 3 tbsp olive oil
  • 2 lemon wedges

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine halved baby potatoes and sliced smoked sausage. Drizzle with olive oil and sprinkle Old Bay seasoning; toss until evenly coated.
  3. Spread the potato-sausage mixture on one side of the baking sheet and roast for 20 minutes.
  4. Add corn and shrimp to the sheet. Drizzle with more olive oil if needed, sprinkle with additional Old Bay seasoning, and roast for another 10-15 minutes until shrimp are pink and opaque.
