  • 1 cup cherry tomatoes (halved)

  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season salmon fillets with salt and pepper. Place skin-side down in the skillet and cook for about 4 minutes until crispy. Flip carefully and cook for an additional 3 minutes or until cooked through. Remove from the pan.
  2. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add halved cherry tomatoes and cook until softened.
  3. Stir in baby spinach and allow it to wilt before pouring in the heavy cream and Italian seasoning. Mix well to combine.
  4. Return salmon fillets to the skillet, spooning sauce over each piece for about 2 minutes.
  5. Serve warm, garnished with freshly cracked black pepper or grated Parmesan if desired.
