Instructions

  1. Bloom the gelatin by sprinkling it over 2 tablespoons of cold water in a small bowl for about 5 minutes.
  2. In the Instant Pot, combine heavy cream, whole milk, sugar, lavender, honey, and vanilla on sauté mode until warmed (about 2 minutes).
  3. Add the bloomed gelatin to the warm cream mixture and stir until fully dissolved.
  4. Strain the mixture through a fine-mesh sieve into serving cups.
  5. Place one cup of water in the Instant Pot and arrange the cups on a trivet inside. Lock the lid and pressure cook on high for 10 minutes.
  6. Let pressure release naturally for 10 minutes before quick releasing. Refrigerate for at least 4 hours or overnight until set.
