  • 1 cup dried navy beans
  • 4 cups water (for soaking)
  • 4 strips bacon
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup ketchup
  • ½ cup brown sugar
  • 1 tsp mustard powder
  • Salt and pepper to taste

Instructions

  1. Rinse the dried navy beans and place them in the Instant Pot with 4 cups of water. Set to high pressure for 1 minute, then allow natural pressure release for 10 minutes.
  2. Drain the soaked beans and set aside. Turn the Instant Pot to sauté mode and cook the bacon until crispy. Remove bacon but leave the fat in the pot.
  3. Add diced onion to the pot and sauté until translucent, about 5 minutes. Stir in minced garlic and cook until fragrant.
  4. Mix in the soaked beans, ketchup, brown sugar, mustard powder, salt, pepper, and 2 cups of water. Stir well.
  5. Seal the lid and cook on high pressure for 15 minutes followed by a natural pressure release.
  6. Stir before serving warm alongside your favorite proteins or cornbread.
