Instructions

  1. Set the Instant Pot to 'Sauté' mode. Heat olive oil and sauté onion, carrots, celery, and garlic for about five minutes until tender.
  2. Stir in the canned diced tomatoes (with juices) and vegetable broth. Scrape the bottom of the pot to release any stuck bits.
  3. Add kidney beans, oregano, and basil; mix well.
  4. Toss in zucchini and chopped kale.
  5. Secure the lid and set the Instant Pot to 'Manual' mode for ten minutes at high pressure.
  6. Once cooking is complete, carefully release the pressure. Open the lid slowly, ladle into bowls, and serve hot.
