  • 1 green bell pepper, diced

  • 1 pound Andouille sausage, sliced
  • 2 bay leaves
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 4 cups water or broth (for cooking)
  • 2 cups long-grain white rice

Instructions

  1. Rinse and soak the dried red kidney beans in a large bowl of water overnight.
  2. In a large pot over medium heat, heat olive oil. Sauté the onion, bell pepper, and celery for about 5 minutes until soft. Add minced garlic and sauté for an additional minute.
  3. Stir in the sliced Andouille sausage and cook until golden brown, about 5 minutes.
  4. Drain the soaked beans and add them to the pot along with bay leaves, cayenne pepper, salt, and enough water or broth to cover by about two inches. Bring to a boil.
  5. Reduce heat to low and let simmer uncovered for about one hour, stirring occasionally.
  6. Serve hot over cooked rice and garnish with chopped green onions if desired.
