  • 2 lbs bison chuck or round cuts
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 3 medium carrots, diced
  • 2 medium Yukon Gold potatoes, cubed
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add bison chunks and brown on all sides for about 5 minutes.
  2. Stir in chopped onions and minced garlic; sauté until translucent (about 3 minutes).
  3. Add diced carrots and cubed potatoes, mixing well.
  4. Pour in beef broth and add thyme and bay leaves. Bring to a boil, then reduce heat to low and let simmer for 2 hours.
  5. Remove bay leaves; season with salt and pepper to taste.
  6. Serve warm in bowls, optionally garnished with fresh thyme.
