  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 2 cups butternut squash, diced
  • 1 cup uncooked wild rice
  • 2 cups vegetable broth
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
  2. Season the chicken breasts with salt and pepper and place them in the prepared baking dish.
  3. In a pot, bring vegetable broth to a boil. Add wild rice; reduce heat to low and cook for about 45 minutes until tender.
  4. Sauté diced onion and minced garlic in olive oil until fragrant.
  5. In a large bowl, combine cooked wild rice, sautéed onions and garlic, diced butternut squash, cream of mushroom soup, milk, salt, and pepper. Mix well.
  6. Pour the mixture over the chicken in the baking dish.
  7. Cover with foil and bake for 1 hour; uncover for the last 15 minutes to brown the chicken.
