  • 2 cloves garlic, minced

  • 1 ½ cups sharp cheddar cheese, shredded
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Slice the potatoes, sweet potatoes, and carrots into thin rounds.
  3. In a skillet over medium heat, sauté onions and garlic in butter until golden brown.
  4. Layer the sliced vegetables in the greased dish, sprinkling salt, pepper, and half of the cheese between layers.
  5. Pour heavy cream over the layered veggies and top with remaining cheese.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden.
