  • 3 cloves fresh garlic, minced
  • 8 oz lo mein noodles
  • 1 cup mixed vegetables (bell peppers, carrots, bok choy)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp oyster sauce

Instructions

  1. Chop chicken into bite-sized pieces and mince the garlic. Slice the vegetables.
  2. Boil water in a large pot and cook lo mein noodles according to package instructions until al dente. Drain but do not rinse.
  3. In a large skillet or wok over medium-high heat, add oil and sauté chicken until golden brown and cooked through (5-7 minutes). Remove from pan.
  4. In the same pan, add minced garlic and mixed vegetables; stir-fry for 3-5 minutes until tender yet crisp.
  5. Return chicken to the pan with noodles. Drizzle soy sauce and oyster sauce; toss well to combine.
  6. Add sesame oil and toss again until heated through (about one minute). Serve hot.
