Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup long-grain rice (basmati or jasmine)
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and Italian seasoning. Sear the chicken for about 5 minutes on each side until golden brown.
  2. Remove the chicken from the skillet and set aside. Reduce heat to medium-low, add minced garlic, and sauté until fragrant (about 1 minute).
  3. Stir in rinsed rice and cook for another 2 minutes until slightly toasted.
  4. Pour in chicken broth and bring to a gentle boil, scraping up any browned bits from the pan. Reduce heat to low.
  5. Return the seared chicken to the skillet, cover, and simmer for about 20 minutes until the rice absorbs most of the liquid.
  6. Stir in heavy cream and parmesan cheese until melted and creamy. Serve warm.
