  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb fresh green beans
  • 1 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • Juice of 2 lemons (about 4 tbsp)
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a large sheet pan.
  2. In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper to create the marinade.
  3. Place chicken in a zip-lock bag or shallow dish and pour half of the marinade over it. Let marinate for at least 30 minutes.
  4. Arrange the marinated chicken on one side of the sheet pan. Toss green beans in remaining marinade and spread them on the other side.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and green beans are tender.
  6. Sprinkle crumbled feta over the hot dish before serving.
