  • 1 cup uncooked quinoa
  • 1 cup barbecue sauce
  • 1 cup low-sodium vegetable broth
  • 1 red bell pepper, chopped
  • 2 green onions, thinly sliced (for garnish)
  • 2 tsp olive oil

Instructions

  1. Rinse quinoa under cold water until clear; set aside.
  2. Select sauté function on the Instant Pot; add olive oil and sear chicken breasts for 3-4 minutes per side until golden brown.
  3. Pour barbecue sauce and vegetable broth over chicken, scraping any browned bits from the pot.
  4. Close the lid and cook on high pressure for 10 minutes. Allow a natural pressure release for 5 minutes before switching to quick release.
  5. Remove chicken and stir in rinsed quinoa into the remaining liquid in the pot. Seal lid again and cook on high pressure for another minute.
  6. Fluff quinoa with a fork, serve topped with chicken, bell peppers, and green onions.
