Ingredients

Scale
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, chopped
  • 1 lb Yukon Gold potatoes, diced
  • 8 oz cremini mushrooms, halved
  • 1 cup dry red wine (like Pinot Noir)
  • 2 cups low-sodium beef broth
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to 'Sauté' mode and heat olive oil. Brown the beef cubes on all sides for about 5 minutes. Remove and set aside.
  2. In the same pot, sauté chopped onions and minced garlic until fragrant (about 3 minutes).
  3. Deglaze the pot with red wine, scraping up any browned bits; simmer for 2 minutes.
  4. Return the beef to the pot and add carrots, potatoes, mushrooms, thyme, bay leaves, and beef broth. Stir gently.
  5. Seal the lid and cook on high pressure for 35 minutes. Allow natural pressure release for tender meat.
  6. Remove bay leaves before serving; enjoy with crusty bread or creamy mashed potatoes.
