  • 3 lbs pork shoulder, trimmed and cut into large chunks
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 cup freshly squeezed orange juice
  • 3 tbsp lime juice
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Cut the pork shoulder into large chunks.
  2. Set the Instant Pot to sauté mode. Add olive oil, chopped onions, and minced garlic; sauté until fragrant (about 3 minutes).
  3. In a bowl, mix cumin, oregano, salt, pepper, orange juice, lime juice, and bay leaves. Coat the pork chunks generously with this mixture.
  4. Place the seasoned pork in the Instant Pot along with any leftover marinade. Close the lid and set to high pressure for 60 minutes.
  5. After cooking is complete, perform a quick release of steam carefully.
  6. Remove the pork and shred it using two forks. For crispy edges, spread shredded carnitas on a baking sheet and broil for about 5 minutes.
  7. Serve hot in tacos or your preferred style.
