Ingredients

Scale
  • 34 lbs brisket
  • 2 cups dry red wine (Cabernet Sauvignon or Merlot)
  • 1 cup low-sodium beef broth
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp dried thyme

Instructions

  1. Season the brisket generously with salt and pepper. In your Instant Pot, use the sauté function to heat oil and sear the brisket on both sides until browned (4-5 minutes each side). Remove and set aside.
  2. In the same pot, add sliced onions and minced garlic; sauté until soft (about 5 minutes), scraping up flavorful brown bits.
  3. Deglaze with red wine, allowing it to simmer for two minutes to concentrate flavors.
  4. Return the brisket to the pot, pour in beef broth, and add thyme. Ensure the brisket is mostly submerged.
  5. Secure the lid and pressure cook on high for 60-70 minutes.
  6. Allow natural pressure release for ten minutes, then quick release any remaining pressure. Slice against the grain and serve with sauce.
