  • 4 medium bell peppers (red, yellow, green)
  • 3 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 cup salsa (store-bought or homemade)
  • 1 cup canned black beans (drained and rinsed)
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped fresh cilantro

Instructions

  1. Season chicken with salt and pepper; place in Instant Pot with salsa. Cook on high pressure for 10 minutes.
  2. Quick-release pressure, shred chicken with two forks, and mix with black beans, half of the cheese, and cilantro.
  3. Halve bell peppers lengthwise and remove seeds. Stuff each pepper half with the chicken mixture.
  4. Place stuffed peppers back into the pot with ½ cup water and steam for 5 minutes.
  5. Top with remaining cheese and serve hot.
