  • 1 cup fresh mushrooms (button or cremini), chopped
  • 1 cup whole wheat breadcrumbs
  • 1 cup low-sodium vegetable stock

  • 3 cloves garlic, minced
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, heat olive oil. Sauté onion and garlic until soft.
  3. Add chopped mushrooms and cook until browned.
  4. In a large bowl, combine sautéed vegetables with mixed nuts, breadcrumbs, vegetable stock, herbs, salt, and pepper. Mix until slightly sticky.
  5. Transfer mixture to a greased loaf pan; press firmly.
