  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth

  • 1 cup bell peppers (mixed colors), chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the onion and bell peppers into bite-sized pieces and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Season chicken thighs with salt and pepper, then sear until golden brown (about 5 minutes per side). Remove from the pot.
  3. In the same pot, sauté the onion and bell peppers until soft (about 3-4 minutes). Add garlic during the last minute.
  4. Return the chicken to the pot; add uncooked rice, cumin, paprika, salt, pepper, and chicken broth. Stir well to combine.
  5. Bring to a boil, reduce heat to low, cover with a lid, and let simmer for about 20 minutes or until rice is cooked through.
  6. Once done cooking, remove from heat and let sit for 5 minutes before fluffing with a fork.
