  • 1 lb ribeye or sirloin steak
  • 1 lb baby potatoes, halved
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh thyme or rosemary (or dried)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss halved baby potatoes with olive oil, salt, pepper, and half of the minced garlic. Spread evenly on a baking sheet.
  3. In a small saucepan over low heat, melt unsalted butter and stir in remaining garlic along with fresh herbs until fragrant.
  4. Season the steak generously with salt and pepper; place alongside the potatoes on the baking sheet. Drizzle garlic butter over everything.
  5. Roast in the oven for about 25-30 minutes or until desired doneness is reached (medium-rare recommended).
  6. Serve with any remaining garlic butter drizzled on top.
