  • 4 salmon fillets (5 oz each)
  • 1 lb fingerling potatoes
  • 3 tbsp honey
  • 2 tbsp Dijon mustard
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Slice the fingerling potatoes in half lengthwise and toss them with olive oil, garlic powder, salt, and pepper until well-coated.
  3. In a bowl, mix honey and Dijon mustard until smooth for the glaze.
  4. Place seasoned potatoes cut-side down on one side of the baking sheet and add the salmon fillets on the other side; brush the salmon generously with the glaze.
