  • 1 lb fresh Brussels sprouts, halved
  • 2 tbsp olive oil
  • 1/4 cup pure maple syrup
  • 1/4 cup balsamic vinegar

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp Dijon mustard

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and trim Brussels sprouts; cut larger ones in half. Cut chicken into even pieces.
  3. In a bowl, whisk together maple syrup, balsamic vinegar, garlic, Dijon mustard, salt, and pepper.
  4. On a large baking sheet, place chicken on one side and toss Brussels sprouts with olive oil, salt, and pepper before adding them alongside the chicken. Drizzle half of the marinade over both.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and sprouts are golden brown.
  6. Brush remaining marinade over the dish halfway through cooking.
