  • 4 (6 oz) salmon fillets
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • 8 oz asparagus, trimmed
  • 1 cup cherry tomatoes

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together maple syrup, Dijon mustard, olive oil, minced garlic, and lemon juice.
  3. Place salmon fillets on one side of the baking sheet and pour half of the marinade over them.
  4. Arrange asparagus and cherry tomatoes on the other side. Drizzle with olive oil and season with salt and pepper.
  5. Bake for 15-20 minutes until salmon flakes easily and veggies are tender.
  6. Drizzle remaining marinade over the dish before serving.
