  • 4 skinless salmon fillets (6 oz each)
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 cup asparagus or broccoli, trimmed
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, minced garlic, olive oil, and lemon juice.
  4. Place salmon on one side of the baking sheet and brush with half of the glaze. Arrange vegetables on the other side.
  5. Season everything with salt and pepper and drizzle with more olive oil.
  6. Bake for 15-20 minutes until salmon flakes easily and reaches an internal temperature of 145°F (63°C). Drizzle with remaining glaze before serving.
