  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a sheet pan with nonstick cooking spray.
  2. In a bowl, combine cherry tomatoes, bell peppers, red onion, olive oil, salt, and pepper; toss until well coated.
  3. In another bowl, whisk together eggs with additional salt and pepper until frothy.
