  • 1/2 cup sweet chili sauce
  • 3 cloves fresh garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cups broccoli florets
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine chicken thighs with salt, pepper, minced garlic, and half of the sweet chili sauce. Toss until well coated.
  3. Arrange marinated chicken on one side of the sheet pan and add chopped peppers and broccoli on the other side.
  4. Drizzle lime juice and remaining sweet chili sauce over everything.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (74°C) and is golden brown.
