  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 tbsp za’atar spice blend
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 4 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine chicken thighs with olive oil, za’atar, minced garlic, lemon juice, salt, and pepper. Coat well.
  3. In another bowl, mix chickpeas with olive oil and a pinch of salt.
  4. Line a baking sheet with parchment paper. Place the seasoned chicken on the sheet and scatter the chickpeas around them.
  5. Roast in the oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
